Golden Time brand noodle flour – 600 g
Egg – 1 piece
Water – 200 g
Soda ash (sodium carbonate) – 6 g
Fine salt – 6 g
Food coloring (yellow) – 1.5 g
Dissolve the salt and soda ash (sodium carbonate) in water.
Add the food coloring and egg, then mix until well combined.
Place the flour into the mixing bowl, and gradually pour in the liquid mixture. Mix using a paddle attachment on low speed (Speed No.1) for 1 minute.
Scrape down the sides and bottom of the bowl, then continue mixing on medium speed (Speed No.2) for 5 minutes.
The dough will appear fairly crumbly. Transfer it to a 6x9 inch plastic bag, spread the dough evenly, press it down firmly, and seal the bag with tape. Let the dough rest at room temperature for 30 minutes.
After resting, take the dough out and roll it through a noodle machine, gradually reducing the roller gap until the sheet is about 1.5 mm thick, then cut into noodles.
Lightly dust with tapioca starch to prevent sticking.
Blanch the noodles in boiling water for 2 minutes, then transfer to a strainer.
Rinse with cold water before serving.
